JC’s was born in 1999.  Named for Jay Cockerell, (JC).  The owners, Jay and Sondra Cockerell started this business for several reasons, all of which had great impact on their lives.  Jay and Sondra both had demanding careers in the medical industry which required intense traveling, this limited their time together and well as time with their family.  Jay is an extraordinary cook and has been told by everyone he has cooked for, “you should start your own Restaurant!” He always thought there was a void in the burger market, so he  decided to create a “real” old fashioned burger.  His secret seasonings and his special grind of fresh U.S.D.A choice chuck were born.  He worked for months before opening JC’s, perfecting the unique flavor, many of whom now call it the “JC’s Fix”.

The original JC’s in Plano is located in an interior corner of a older strip center.  Without much exposure or advertising, this little “hole in the wall” grew by word of mouth.  Unless you had heard about JC’s from a friend, you would not have known of its existence.  Within six months of opening in 1999, it became, “standing room only”. This made it hard sometimes to keep up with the demand.  In the early stages of JC’s, it was not unusual for JC’s to run out of meat. On one occasion, around 3pm on a Saturday, JC’s was already out of meat, way too early to run out or close, so JC went to a local butcher shop and purchased ground chuck, put it on the grill and refused to sell it, he refunded a line of customers their money, and had to close early, he said, “Sorry, this meat is not fit to be cooked on my grill.”

People were driving for miles to taste a fresh ground burger made right in front of their eyes. The cooks take balls of fresh USDA ground chuck, (ground at JC’s that day), plop it on the grill and flatten it out with their spatulas. Adults and kids alike, are entertained by the cooks, who work so diligently at rounding out the patties to perfection. JC wants everyone to know what they are getting, he wants his food out there for the world to see. “We have the best meat around, we want everyone to see it, and see it prepared, we have nothing to hide, I might run a closed kitchen  if we were serving frozen, or preformed patties off a truck.”

JC’s in Plano was busting at the seams, so in 2003, it was necessary for JC to look for a second location, if for nothing else, to gain more kitchen space.  He opened  JC’s in Allen, where there is enough kitchen space to prep for both restaurants.  JC’s in Allen has also built its own block of regular customers, who come in to get their “JC’s Fix” on a regular basis.

Since then, JC’s has grown by licensing selected partners to own and operate their own  JC’s Burger House, most of whom are avid long time customers.  JC agreed to expand in this manner, but required that the partners be “owner operators” and Jay and Sondra are.

To date, JC’s has grown to a family of six.  You can now enjoy JC’s in Plano, Allen, McKinney, Richardson, Frisco, and Rockwall.
